Buckbeak is a hippogriff which is explained to be a fusion of a Harpy Eagle and a gray horse with a bit more size and a 20ft wingspan. As explained by Hagrid in the book, Hippogriffs are very calm and powerful creatures. But they are known to be very touchy and must have respect; eye contact and a bow before reaching in their space is expected or there will be insult.
